This Vegan Mug Brownie is the perfect dessert to satisfy those chocolate cravings. It's rich, fluffy, and delicious, and it only takes five minutes to prepare and cook in the microwave.

This recipe is similar to the Chocolate Mug Cake I made recently, but I have substituted the butter for sunflower oil and used unsweetened almond milk instead of cow's milk to make it plant based.

Recipe Ingredients

- Self-raising flour - called self-rising flour in the USA and Canada.
- Baking powder - for extra fluffiness.
- Brown sugar - gives the brownie a lovely, rich flavour. You can also use white sugar or coconut sugar.
- Cocoa powder - use unsweetened and not hot chocolate powder.
- Almond milk - use unsweetened.
- Sunflower oil - if you don't have it, then melted coconut or canola oil can be used.
How to Make a Vegan Mug Brownie

- Add the dry ingredients to a microwave-safe mug and mix well with a fork until combined.

- Add the wet ingredients, then mix well until combined. Place in the microwave for 1-2 minutes. The timing varies greatly depending on the microwave oven. See the notes in the recipe card below. Once ready, leave to stand for a minute as it will continue to cook.
Top Tip
Place a piece of kitchen towel under the mug when microwaving to catch any spills.

Vegan Mug Brownie
Ingredients
- 4 tablespoons self raising flour, (called self rising flour in the US & Canada)
- ⅛ teaspoon baking powder
- 1½ tablespoons brown sugar, or coconut sugar
- 4 teaspoons cocoa powder, unsweetened
- 5 tablespoons almond milk, unsweetened
- 2 teaspoons sunflower oil
Optional
- 1 tablespoons dairy free chocolate chips
Instructions
For 1 Serving in a Mug
- Add the flour, baking powder, cocoa powder and sugar to a mug, and stir with a fork to combine. Ensure the mug is microwave safe.
- Add the almond milk and sunflower oil, and whisk together until combined. Add a few chocolate chips if you wish!
- Place some kitchen towel onto the microwave and put the mug on top - this is to catch any spills. Microwave for approximately 60-90 seconds. PLEASE READ NOTES ON TIMING BELOW
For 2 Servings in Small Tea Cups or Ramekins
- Add the flour, baking powder, cocoa powder and sugar to a small bowl and stir with a fork to combine.
- Add the almond milk and sunflower oil and whisk together with a fork until combined. Add a few chocolate chips if you wish!
- Divide the batter into two small microwave safe teacups or ramekins, then microwave each separately for 40-60 seconds. Place a paper towel onto the microwave and put the teacup on top - this is to catch any spills. PLEASE READ NOTES ON TIMING BELOW
