Maltesers Rocky Road is the ultimate Rocky Road recipe! It's an irresistible combination of milk and dark chocolate, Maltesers, marshmallows, glacé cherries, and chopped peanuts.

Rocky Road could not get any better than this! Soft marshmallows, crunchy Maltesers, chewy glacé cherries and peanuts are combined with creamy milk and dark chocolate. With just one bowl and 10 minutes of prep time, it couldn't be easier to make.

Recipe Ingredients

Note: The full quantities are shown in the recipe card below.
- Chocolate - I like to use a mixture of milk and dark chocolate, so it's not too sweet, but you could use all milk chocolate or all dark chocolate. Use good-quality chocolate chips or melts that are made for melting (usually found in the baking aisle). Cadbury is our favourite.
- Maltesers - there is no alternative to Maltesers, although I think Whoppers in the USA might come close.
- Marshmallows - use large marshmallows cut in half.
- Glacé cherries - glacé cherries can be substituted for Turkish delight. If you live in Australia, Allen's Ripe Raspberry lollies are also a popular choice.
- Peanuts - these are purely optional for some extra crunch. Leave them out if you wish.
- Coconut oil - coconut oil is optional. It gives the Maltesers Rocky Road a lovely shine and helps prevent the chocolate from cracking when sliced.
How to Make Maltesers Rocky Road

- Place the chocolate and coconut oil in a large mixing bowl.

- Heat the chocolate and coconut oil in the microwave, uncovered, in 30-second intervals, stirring with a metal spoon, until melted and smooth.

- Add the mix-ins.

- Mix well until everything is coated in chocolate.

- Tip the mixture into the prepared tin and press down firmly. Add some Maltesers to the top. Refrigerate for at least 3 hours.

- Remove the Rocky Road from the fridge and let it sit on the benchtop for 30 minutes before cutting. To prevent cracks in the chocolate, run a sharp knife in hot water for 30 seconds to warm it.
Substitutions
- Nuts - peanuts can be substituted for any nuts. Nuts can be skipped entirely if you want it nut-free.
- Glacé cherries - can be substituted for Turkish delight or raspberry lollies.

Common Questions
Store the Maltesers Rocky Road in the pantry or fridge if you live in a warm climate.
Remove the Maltesers Rocky Road from the fridge 30 minutes before cutting. I like to cut mine into slices and then squares.

Maltesers Rocky Road
Equipment
- 20cm square baking tin
Ingredients
- 400 g milk chocolate, baking melts or chips
- 100 g dark chocolate, baking melts chips
- 20 g coconut oil, or vegetable oil, helps prevent the rocky road from cracking and adds some shine
- 100 g large marshmallows, cut in half
- 250 g Maltesers
- 100 g glacé red cherries, halved, (or turkish delight)
- 35 g peanuts (optional), chopped
Instructions
- Grease and line a 20cm square tin with baking paper.
- Heat the chocolate and coconut oil in the microwave, uncovered, in 30-second intervals, stirring with a metal spoon, until melted and smooth. Be careful not to overheat, as the chocolate might seize. (My microwave took 2 minutes in total).
- Add the marshmallows, 200g of the Maltesers (leave 50g of Maltesers for the topping), glacé red cherries and peanuts to the melted chocolate and stir well to combine.
- Pour the mixture into the prepared tin, spreading out evenly (don't forget the corners!). Arrange the remaining Maltesers over the top. Refrigerate for at least 3 hours.
- To serve, remove the Maltesers Rocky Road from the fridge 30 minutes before cutting.
- Store in a cool place. It will keep for a few weeks. If it's hot where you live, store it in the fridge.
